Summer is well under way and if you’re in the Northern hemisphere in particular, it’s the ideal season to enjoy a light and refreshing salad. Packed with nutrients and antioxidants, green salads are great for a filling lunch or dinner.

When combined with a good source of protein such as chicken, fish, lentils or tofu it can be a hearty meal in itself. Salad is ‘boring’ however if you have it in the same way all of the time. Variety is the spice of life and key to enjoying a delicious meal…even if it is a ‘simple salad’.
